V60 or Kalita Wave

Brewing with a V60 or Kalita Wave is a simple, easy alternative to traditional dripped coffee brewers, offering more control and individual servings. The V60, named for it’s V shape and 60-degree angled sides, is similar to the flat-bottomed, metal Kalita Wave.

V60 & KALITA WAVE PREP

V60/Wave Filters
Kettle
Grinder
Digital Scale
Timer

Weigh 20 grams of coffee, and 340 grams of water.

Grind coffee to medium-fine.

Place V60/Wave on brewing vessel; add the filter, and rinse with brew temp water; dump water from vessel.

Place brew vessel on scale and zero/tare it; pour ground coffee into V60/Wave (scale should say 20g), gently shake to settle the coffee bed, and zero/tare again (now scale should say 0g).

Start timer; pour about 60g heated water hard/quickly over coffee bed to wet all grounds; if there are any spots that are bubbling, you can gently agitate that area with a spoon.

After 30-60 seconds (depending on the coffee), the coffee bed should stop bubbling; begin gently pouring heated water over coffee in an even, spiral pattern, until scale reads 210g total

Let water volume drop about .5-1 inch (about 45-60 seconds, then do another spiral pour, until scale reads 340g total weight

After water drops .5 inch, lift the V60/Wave and gently swirl the coffee/water once or twice to settle the bed and get any coffee clinging to the filter back into the water.

Water should draw down over the next minute or two and finish between 3:30-5 min.

Remove V60/wave from vessel, dispose of filter, and rinse your device.

CLEVER DRIPPER

Supplies:

Crossroads Coffee
Clever Dripper
#4 Filter
Kettle
Grinder
Digital Scale
Timer

Weigh 32 grams of coffee, and 480 grams of water. Grind coffee to medium-course.

Fold the seams of your #4 filter in opposite directions. Open the filter and place it in your Clever Dripper. Fill with off-of-boiling water to rinse the filter. Engage the bottom to drain the rinse water.

Place the device on your scale and zero it. Grind 32 grams of coffee on a medium coarse setting. Transfer the ground coffee into the Clever Dripper.

Start the timer. Right off of boil, pour 480 grams of water over the bed of ground coffee.
Allow the coffee to steep for 3 minutes.

After 3 minutes, remove the lid and stir to break up the crust. The remaining water should draw down by 4 minutes. Remove the Clever, discard the filter and extracted grounds, stir the brewed coffee.

ON THAT GRIND

Every coffee is different and needs slight grind adjustments. If your brew tastes bitter, your grind is too fine. We recommend grinding finer and finer each cup, until you taste bitterness, and then back off slightly. This ensures maximum extraction/flavor without getting into over-extraction territory.
